A Ginger Filled Christmas

This year has gone by in a whoosh, can you believe Christmas is a week away! Just a week! 7 measly days! It’s my favorite time of the year, the decorations, carols, the pine smell and of course the presents! Last minute present shopping, decorating, parties, cooking… wait did someone say cooking!? Sure did, now i’m sure you’ve all seen these great architectural structures, gingerbread houses, these are personally one of our families greatest cooking traditions, where after dinner we all dig into around 5 gingerbread pieces each (possibly even more…) and not to mention gingerbread being eaten throughout the holidays.
Well, these holidays my sister, friend and i began the adventure of making our own gingerbread house. For us the task was daunting, yet too exciting to hold off until another Christmas. After a little more than half a day of baking, beating, glueing, decorating and licking off the sticky royal icing off our fingers the task was complete! These bad boys had come to life, and has been apart of our family for a few days now, sitting loyally on the kitchen bench eagerly awaiting us to walk by and take a chunk out of it, even greeting guests to offer his comforting flavors. I can tell you, making a gingerbread house should be done at least once in everyone’s life, it’s a memorable time, and is soooooo satisfying to crack into and get munching on during this festive season. And you can be as creative as you want, chuck on as many lollies, embrace the time to truly splurge on some of lifes greatest flavors!

If your on the hunt for a killer gingerbread recipe then do i have the one for you!


prep. time: 45 minutes plus cooling time
cooking time: 25 minutes
makes: 12-15

125g butter, chopped
1/2 cup brown sugar
1/4 golden syrup
1 egg yolk
1 3/4 cup plain flour
2 tsp ground ginger
1 tsp bicarbonate soda

1. Beat eggs and sugar in an electric mixer until pale and creamy. Add syrup and egg yolk and beat until combined. Add sifted flour, ginger, bi-carb soda and beat until well combined, forming a ball
2. Knead on a floured surface until smooth. Cover and refrigerate for 30 minutes or longer (i tend to make it the day before and bake it the next day)
3. Preheat the oven to 180C.
4. Roll out dough on floured surface or cut slices from dough. Cut out shapes with cookie cutters and place onto baking trays lined with baking paper. (then don’t spread much so you can put them quite close together)
5. Bake for 10-12 minutes or until lightly golden. Stand for 5 minutes before transferring to a wire rack to cool
