Is it just me or has 2011 really flashed before our eyes. BAM! It was easter. BAM! It was raining and winter. BAM! The cold days turned into Summer. BAM! It was Christmas. and BAM! It’s almost 2012…. freaky huh? Any New Years Resolutions?? Mine would have to be more organized and make the most of every moment, cliché i know, but something worth striving for.
As 2011 comes to a close my diary refuses too. As my sister said “it has gone beyond cool and rustic, it’s just fat a bulging”, but personally i think it’s going to be so great to look back on in 10-20 years and look at all my experiences and discoveries. I managed to keep it up all year, and have everyday filled in. i must admit i really couldn’t be bothered towards the end, but now i’m here it’s even great now looking back at it all, all the things i stuck in, a big effort, but i really loved doing it and i recommend it to you all! Maybe it can be your new years resolution to keep a diary!
Okay now for a recipe! This is a great bruschetta that my sister and i made up this Summer, once again, perfect for those hot days!
Prep. time: 10 minutes
2 pieces of good quality bread – sourdough, whole meal, multigrain, ciabatta
2 tomatoes, diced
3/4 of a red onion (or the whole onion if you’re an onion fan like myself)
1 cup approximately of coriander washed and cut
1 tablespoon olive oil
1 teaspoon balsamic (or more if you enjoy the taste)
Salt and Pepper
1. Toast the bread either on grill in the oven, turning over when golden or use a toaster or any other way you think would be convenient to toast bread
2. Dice tomatoes and onions, and cut up coriander and combine in a bowl
3. Pour olive oil and balsamic on top of the coriander salsa and season with salt and pepper to taste
4. Spoon out the coriander salsa onto the two pieces of bread and add more balsamic on top if desired
-If you want more sustenance in this bruschetta, tandoori chicken tastes sublime put on top!
-And if you’re not a fan of coriander, basil tastes just as brilliant!
