Yoghurt and Raspberry Pansy Surprise Popsicles

Ahhhh what a simply sublime time of the year on this side of the globe! The sun rises early, the days go late, you can walk around without slippers on and not feel cold, you can almost smell Summer in the air… if you know what I mean – but also because of all the fresh, flavorsome and fantastic tasting food!! The warm months means flavor packed salads, ice-cream, bbq, fish and chips, ice-cream, fresh fruit and ICE-CREAM! – One of life’s greatest gifts (along with pasta and cheese and a never ending list or purely awesome food). Soooooo today I have decided to share with you all (another foodtech folio food item) a delicious spring popsicle (keeping with the ice-cream theme, but 10 times easier!)

YOGHURT AND RASPBERRY PANSY SUPRISE POPSICLES

Ingredients:

-1 teaspoon rose-water (optional – if that flavor is your kind of thing then I whole heartedly encourage you!)

-1/2 cup basic sugar syrup (½ cup caster sugar, ¾ cup water – see first method below)

-1 cup caster sugar

-4 cups basic vanilla yoghurt

-250g frozen raspberries

-8 pansies – cleaned

Tools:

-8 popsicles sticks

-8 medicine glasses to be moulds

Basic Sugar Syrup Method:

1. place sugar and water in a small saucepan over low heat and stir until sugar is dissolved

2. increase heat to high and bring to the boil for 1 minute

3. pour syrup into an air-tight container and place in the fridge to cool completely

Yoghurt and Raspberry Pansy Swirl Popsicles Method:

1. place the raspberries, rosewater and sugar syrup in a food processor, and process until smooth and then press the puree through a sieve to remove seeds

2. place the yoghurt in a bowl and gently fold through the raspberry puree to create a swirl – I did 3 folds to get a lovely swirl without making the whole yogurt pink

3. gently wash the pansies and place them at the bottom, face down in the popsicle moulds, spoon the raspberry and vanilla yoghurt mixture on top, gently insert the popsicle sticks, place all the popsicles in the freezer to set (around 4 hours)

4. When the popsicles are ready to pull out of their moulds fill a bowl with hot water and quickly dunk the glass mould into the water then gently move the popsicles and pull them out of the mould and HEY PRESTO!! all done!

Serve immediately to avoid them melting and most importantly – enjoy!! 🙂 how easy was that?? Enjoy this quick and easy summer popsicle with the beautiful pansy surprise!
