Stained-Glass Christmas Cookies

With Christmas not right around the corner any more, but in fact right in front of us the air is even more so filled with Christmas cheer, the ever comforting pine smell, the anticipation of presents and the coming together of families and friends! Isn’t it such a wonderful time of the year!?
I was even saying to my mum the other day that I want to do night Christmas shopping  some time to feel that Christmas buzz as we rush from store to store collecting Christmas goodies. I know for many of you it’s something you want to escape, but there’s something about that dark sky outside and the cosy lights and carols playing throughout the shopping centre that seems to inviting! It must be the part of me wishing for a white, cold and cosy Christmas, as over here we experience the stifling heat (or thunder storms like last year). Defiantly love it – although to experience a white Christmas is most certainly on the bucket list! 🙂

Anyway enough of this jib jab – it’s time to get down to business!
Here is a recipe that I found at the beginning of December and have been looking for an excuse to make – and what better excuse than Christmas!
It’s perfect for gifts, having as nibbles on the table for parties, or even for pure self enjoyment!
The recipe has been adapted from The Australian Women’s Weekly – Christmas Cooking, 2001, Stained-Glass Christmas Cookies, pg 107

STAINED-GLASS CHRISTMAS COOKIESstained-glass christmas cookiesIngredients:
250g butter, softened
2 teaspoons lemon rind
1/2 teaspoon vanilla essence
3/4 (165g) cups caster sugar
1 egg
1 tablespoon water
2 1/4 cups (335g) plain flour
90g individually wrapped boiled lollies

1. Beat butter, rind, essence, sugar, egg and water with an electric mixer until smooth (be careful to not overbeat). Fold in flour then knead on a floured surface until smooth. Cover with a plastic wrap and refrigerate for at least 30 minutes.

mixture with flourkneaded lemon shortbread dough2. In the meantime, preheat an oven to 180C/moderate and line two oven trays with baking paper
3. Using the handle of a rolling pin, gently tap the wrapped lollies to crush slightly. Then unwrap the lollies and placed into separate bowls by colour. (The boiled lollies I bought we’re particularly hard to crush to I ended up grinding them quickly in a coffee grinder which still worked perfectly fine)

boiled lollies crushed boiled lollies4. Roll the dough out to around 4 mm thick and use medium size cookie cutters to cut shapes into the dough then use small sized cookie cutters to cut out the centre of each cookie. Then bake for around 5 minutes.

cut out cookies rolled out biscuit dough christmas cookie cutting cookie cutters5. Remove trays from oven and fill the cut out centres with all the different coloured lollies! Bake for another 5 minutes or until pale golden. Remove from the oven and leave to cool on the trays and bobs your uncle!

    • Oh, and I just want to add that I am _not_ a baker – even when I follow recipes they usually flop but these are great. BTW, once I had already started I realized I didn’t have a lemon so I used orange zest instead and they taste wonderful.
