There’s something about opening your fridge and using what you have in it (along with a dash of creativity) to construct a lunchtime special, sandwiched between to beautiful pieces of bread. One of the many ‘must do’ things in life, that I’ve always had a silent excitement for is setting up my own sandwich bar, and filling it with ingredients and delicious condiments that can tickle everybody’s fancy, so they can build their own ‘ultimate sandwich’.
Sandwiches for me, is the idea mid-day lunch break meal.
They are satisfying.
Can go from sweet to savory, and even in-between in the blink of an eye.
They are quick, easy, and with even minimal effort can be one of the greatest creations around.
They can be eaten, in hot weather cold weather, fresh or toasted.
They are perfect to be eaten any time of the day, wherever, whenever.
This delicious goodness, breaks up that mid-day lag, leaving you something to look forward to in the morning (practically my school morning in a nutshell)
This list could really go on on, I’m only getting warmed up!
So my friends, here we go again with a ‘yumtastic’ (is that even a word? as of now… yes it is) series, where I will be sharing with you my favourite, classic, new found, mid-day saving sandwich ideas that will hopefully inspire you to whip up, and put your own favourite flavours into that holy relic that is THE SANDWICH.
So, here is my personal invented favourite.
CORIANDER & BASIL PESTO CHEESTY TOASTIE
Basil pesto and coriander? ‘Is that even a good combination?’ I hear you ask.
Well, let me answer your question with another question. ‘Does a cracker go well with cheese?’
Incase that didn’t make sense… YES it does! A bit of a mix of herbal flavours which you will not regret trying. So, let’s hop on the ‘basil & coriander’ train, and go full steam ahead!
You will need:
– bread (I used dense white bread called ‘Pane di Casa’ which is perfect for toasting)
– chunky basil pesto
– salt and pepper to season
Let’s Build It!:
1. Spread a nice liberal layer of the pesto onto one side of the bread, then top with cheese, then tomato, onion, a garnish of coriander and “don’t forget to season!” as I always say to my sister as it really brings out the flavours of each ingredient in this sandwich 🙂 2. Toast until cheese is beautiful and melted
