Getting me a lil’ better?
Pretty much these well-loved combos are as close to as fool-proof as you can get (apart from your Mama’s most regular home made meal… well… that’s pretty much inbuilt into our cooking memories, amma right or amma right?)

Wait till you cook it! (and better yet taste it)
It is literally one of the simplest meals to whip up!
Followed by some serious chowin’ down..
Shall we get down to business?
1 zucchini, thinly sliced
2 handfuls of mozzarella (I buy the fresh logs of mozzarella and dice it for this recipe)
finely chopped basil leaves
Preheat oven to 450°F (230C)
Spread out on a baking sheet and roast for about 20 minutes.Cook the pasta according to packet instructions.Combine roasted veggies with cheese, basil, pasta and a splash of balsamic vinegar.
—Upon cooking this, I had an afterthought of adding garlic with the veggies for roasting to add extra flavour.
