Amadian Granola

2 cups rolled oats
1/3 cup sliced almonds
1/3 cup unsalted cashews
1/4 sunflower seeds
1/4 desiccated coconut
1/2 teaspoon ground cinnamon
*you can add more nuts if you desire or any other nuts or seeds you would like to add

1/3 cup honey (add extra if you enjoy the honey taste)
1/3 cup maple syrup (strong maple syrup)
2 tablespoons butter
1 tablespoon vegetable oil
1 teaspoon vanilla essence

sultanas and/or dried cranberries or any other dried fruit you would like to add after baked and cooled

1. Preheat oven to 160C and combine rolled oats, sliced almonds, sunflower seeds, coconut and cinnamon and stir until well mixed
2. Add honey, maple syrup, butter, vegetable oil and vanilla essence to microwavable bowl and heat until runny, or if you would like to do it on the stove add the ingredients to a small saucepan and stir on low heat until runny (around 1-2 mintutes)
4. Add the the honey and mayple mixture to the dry ingredients and stir until all is well covered
5. Spread out on a baking tray and bake for 30 minutes or until golden brown, allow to cool as this is when the clusters will form
6. Toss through your selection of dried fruit (or add them when about to eat granola, either or) and store in an airtight container


i especially enjoy this as breakfast with sultanas, milk and combined with other mueslis

other serving suggestions:
-with yogurt
-fresh fruit
-as a snack with dried fruit or by itself
-added to the top of muffins for a extra crunch
-on top of ice-cream (personal favorite)
