1/2 vanilla bean
500g frozen mixed berries
1/4 cup caster sugar
1. Halve vanilla bean lengthways. Scrape seeds from bean. Place berries, seeds, bean and sugar in a saucepan over low heat. Stir to combine.
2. Cook, stirring occasionally, for 8 to 10 minutes or until berries have just softened. Remove from heat. Cool completely. Serve.
-mixed in a smoothie/milkshake
-on french toast
-along side a cake
-drizzled on pavlova slices
-with croissants (even better with french toasted croissants)
-in a trifle
