There are so many things I love about Summer.
The beach. The long days. The ice-cream. The fresh dinners. The summer clothing.
Oh and also…. the MANGOS!
It is absolutely and most definitely mango season, so what’s not to love?
It is by farrrr one of my most favourite fruits (well, that and apples, and grapes… and… well this list could go on…).
I could literally have it on anything, no lie.
Breakfast with muesli, in a salsa (mango, chilli & coriander salsa – you make chicken even more heavenly), in a coulis on ice-cream… so versatile, so delicious.
An abundance of mangos, combined with searing heat only really means one thing; a nice cold treat, am I right?
I decided to combine those favourite tropical flavours of; mango, lime and coconut to create the perfect mid-summer saviour, or maybe something to transport you all suffering the wintery cold on the other side of the planet to a warm paradise dream?
adapted from Donna Hay’s Rock melon and Yoghurt Popsicles
Ingredients:
1 cup greek yogurt
1/4 caster sugar
1/4 cup water
4 heaped tablespoons of toasted coconut
400g chopped mango
1 limes worth of juice
Method:
1. Place the yoghurt in a bowl, add the water and sugar, then whisk to combine. Then stir through the toasted coconut.
2. Put the mango and lime juice in a blender, and blend until smooth.
3. Layer the yogurt and mango mixtures in the icy pole moulds. As each layer should be almost frozen before the next is added, when one layer is made, place in the freezer for around 20-30 minutes before adding the next.
4. Once the final layer is added, top with a popsicle stick and freeze for around 4 hours or until the popsicle is frozen.
Yum, can’t wait for summer to have these!

Over here it’s a true gamble with the mangoes, they are never ripe enough and they don’t taste the same as in the tropical countries .. plus they cost an arm and a leg.
