Coriander Bruschetta

Prep. time: 10 minutes
Serves: 2

Ingredients:
2 pieces of good quality bread – sourdough, whole meal, multigrain, ciabatta
2 tomatoes, diced
3/4 of a red onion (or the whole onion if you’re an onion fan like myself)
1 cup approximately of coriander washed and cut
1 tablespoon olive oil
1 teaspoon balsamic (or more if you enjoy the taste)
Salt and Pepper

Method:
1. Toast the bread either on grill in the oven, turning over when golden or use a toaster or any other way you think would be convenient to toast bread
2. Dice tomatoes and onions, and cut up coriander and combine in a bowl
3. Pour olive oil and balsamic on top of the coriander salsa and season with salt and pepper to taste
4. Spoon out the coriander salsa onto the two pieces of bread and add more balsamic on top if desired

Variations:
-If you want more sustenance in this bruschetta, tandoori chicken tastes sublime put on top!
-And if you’re not a fan of coriander, basil tastes just as brilliant!
